Is it just me, or am I obsessed with coconut recipes?! It does appear to be a bit of a recurring theme here, but I also suspect there is a big gap in the ‘amazing coconut flour recipes’ market. I have wasted an awful lot of coconut flour on other recipes that haven’t turned out that well..so here we go, another one of my creations.
I LOVE lemon. Lemon anything. I used to make beautiful lemon biscuits as a kid, which were made of a ring of plaited dough dipped in a sweet tangy lemon icing when they were still warm. They were incredible. THIS biscuit is absolutely nothing like that at all to look at, BUT there is something in the lemony goodness of it which reminded me of that bickie.
My amazing lemon coconut biscuits
3/4 cup of coconut flour
1 cup of shredded coconut
1/2 cup rapadura sugar (or sugar of choice)
2 Tbspns of honey
1/2 tspn of bicarb soda
2 Tbspns boiling water
Zest of 2 lemons
Juice of 2 lemons
Mix coconut flour, coconut and sugar together. Melt butter and honey together. Mix bicarb soda and boiling water together and add to butter mix. Stir butter mix into dry ingredients, add zest and lemon juice and combine well. Place small spoonfuls onto a lined tray and flatten into desired shape. Bake for 20-25 mins in slow oven, approx 160 degrees C.
Recipe makes about 18 biscuits which are lovely served with lashings of butter and a cup of tea.
